Sounds like Planet X are insolvent. I'm sorry to hear it, I like their bikes.
I keep getting sent letters asking me to file a claim if I am an "unsecured creditor". I'm not sure why, though I do have a bike from them via cyclescheme.
It's all paid off, so they can't come after me for the bike, right? Or is there some small print I missed? Why am I getting these letters?
Is that relating to old PX or PX after they were rescued?
How would I tell?

"New" Planet X is Winlong Garments Ltd. I would assume the letter would mention them if it's anything other than the old P-X.
Why am I getting these letters?
You're probably listed as a creditor somewhere, might just be something minor like unspent balance on a gift card, or just a mistake in their system. It's basically just a final call for suppliers, lenders, customers etc to submit claims. They then total them all up, work out how much money is in the pot (likely very little) and divide it proportionally.

No, unless I've also missed something then shops are paid for the bikes upfront. The only exception to that rule would be if you actually worked for P-X, but then you wouldn't be asking the question.

Old Planet X entered administration a couple of years ago.
You probably had some small innocuous balance due to you (gift voucher, credit on your account etc ).
Technically you can claim for that.
If you don't want routine letters contact the administrator and ask to be "opted out of future correspondence".
They are legally obliged to send you notices of any intended dividend (and a couple of other things) so that won't stop.
