Thinking of ordering a pipedream sirius for general trail riding and bikepacking, also as a bit of a project to build over time. However seem to fall as a 6 ft long legged between a long and longer. Tempted for longer for stability bikepacking but will this make it less steerable in local dales trails ...

Either would work. I'm 6ft with 34" leg and long arms. I'm on a sherpa that works out the same reach as the long sirius. It doesn't feel too short with a 50mm stem but I got it to complement my LLS big bike so wanted a more nimble trail mile munching bike than downhill stability. The longer reach bikes tend to put more weight on the hands, which is great for going down or tech, but I find gets more tiring for long distance seated pedaling.

Although long in reach terms, they have a steep seat tube angle. So in terms of seated position for bike packing type riding they're maybe not so long.

That said, I went for the smaller of the two options for me on their sizing chart (Moxie).

It certainly doesn't feel as long as the reach suggests. I've got the 'medium' and at 174cm it feels just about right but I probably could have ridden the longest one.

If I was 6ft I'd definitely get the longest.

The adjustable back end means you can run the wheelbase shorter for a more nimble ride

As other say, they don't feel long when riding due to the steep seat angle. I'm on a longer Moxie and I'm 6'2". Use a 40mm stem and it feels completely normal to ride around on, despite the nearly 1300mm wheelbase and 510mm reach.
If you want stable, get the longer.
