I know this is probably a stupid question but does buying 14mm nipples instead of 12 mean that I have to buy spokes that are 2mm shorter?

You could do but it'll make very little differance.

DT nipples have extra threads on the longer ones. For 14mm nipples I use a spoke length 1mm shorter and 2mm shorter on 16mm nips.
