I have an On One Smorgasbord 26x2.25 and an On One Chunky Monkey 26x2.4. Not sure which wheel each would be best on. Any suggestions?

Chunky Monkey on the front, Smorg on the rear.

Depends on you, the bike, where you ride and 101 other things.
Rules of thumb:
FS bikes - big tyre on the front for grip and lower rolling resistance
Hardtails - equal sizes for grip and comfort
Rigid bikes - big tyre on the front for 'comfort' & grip
Slickest and most 'summer' tyre goes on the back.
So yup:
Chunky Monkey on the front, Smorg on the rear.
