Will a 10 speed XTR rear derailleur (980) fit an 8 speed cassette?

I suspect an 8 speed chain will be too wide for the derailleur cage.

That mech will only work with a 10 speed cassette and 10 speed MTB shifter.
If you want to use an XTR mech with an 8 speed cassette you need a 9 speed RD-M970 model.

That's irrelevant - the cable pull ratio is wrong, so it won't work. 10 speed (MTB) mech needs 10 speed block.
9 speed will be fine, and 10 speed road will probably be alright, although you may get some rubbing on the cage as above.
