I use a Baa Baa baselayer and Gore Phantom softshell but wouldn't mind sticking another layer in between.....was looking at the Baa Baa jersey or the Swobo merino one. I want it to be fairly thin and urestrictive but adding warmth. I did use my on-one long sleeved jersey but it all just feels too bulky.
Any thoughts?

I tend to use an Icebreaker 200 Merino LS as a mid layer, though with a random man made fibre base layer underneath (and a softshell on top in this weather). I go to 260 Icebreaker if it's crazy cold and I'll be standing around a lot.

Something made from Polartec Powerstretch maybe. Not cheap, but stretchy, so it fits close, just warm enough and close fitting so it works well under tailored cycle stuff. Loads of brand options out there, but Rab stuff is cut well and they have a hooded option that gives you the option of wearing the hood under your helmet.

Or just double up on the baselayers if you don't need that much extra warmth.
I agree with BWD that Polartec Powerstretch is fantastic stuff (I have a Haglofs mid-layer), but I generally find it actually too hot with a softshell over the top (even in very cold weather), and doesn't cut out enough wind to be comfortable as a top layer when it is windy. Haven't tried it without a base layer..might be ok, but makes for a less versatile layering system. Brilliant in some circumstances as a top layer though (down to around 5 degrees C or when wind isn't an issue).
I wear a baa baa base layer with a Haglofs bike gilet then a windproof shell or winter Jersey. The gilet just gives that extra core warmth for me without the bulk.
Did a 4hr road ride last Thursday night in pretty cold temps without any issues, as it gets cooler I break out the heavier merino.
2 layers is enough for me
Best mid layer I've found so far is one of the Howies (I got it in a sale very cheap!) Merino waffle ones, only issue is it is a bit delicate, pulls easily but so warm
