Currently running OO Chunky Monkey's. Ignoring manufacturer measurements, which often seem to have little relation to reality, what's bigger but not plus?

Ardents 2.4 are pretty large

Continental 2.4 Trail Kings, but probably only slightly larger than a Chunky monkey.

I was considering Conti X Kings but wasn't sure how much larger than a CM they'd be.

The bontys are similar size to the cm, but only the older ones. The newer ones are lower volume.
Wider rims if you want greater volume?

mine are the TLR new ones and are 59mm high, 60mm wide at the casing with a 61mm wide tread on spank oozy 295 trail rims which is the same as CM's, 2.4 trail kings and 2.4 ardents

Any other quality apart from big? Sidewalls? Grip? Rolling? Rocks? Mud? 2ft of dust?

Ardent comes up nice, great for my riding at the moment.

Bit of grip would be nice. 🙂

Riding my fatty for the last 6 months has made me yearn for bigger rubber on my other bikes.

I found a German tyre database with user measurements of casing width and height. I'll dig out the URL and post a link later for anyone interested.
