Is it normal to turn down the first offer? Looks like the replacement on offer isn't quite what the bike stolen was. EG race bike replaced with a non raced spec'd bike.
Don't know the form really? Do they take it well if you doubt the valuation?

Insurance exists to put you back in the position you were in before your loss - so absolutely hammer them until you get want you want/need
