I have a hope headset and uberbike bottom bracket that have cartridge bearings fitted.
Now they are both smooth but I was just wondering if I should be regreasing them or just leave them as the are?
How do you get the seals off?
What's the best grease to use?

Yes, I regrease them.
Use a Stanley knife by poking the point just under the inner edge of the seal and prising it off. They come off really easy.
Use WD40 or similar to wash them out. WD40 is more of a solvent than a lubricant anyway and the pressure of the spray should flush most of the dirt and old grease out.
Any waterproof grease should do.
