Im building a 26er steel frame single speed mtb and wondered if a 32/16 gear ratio would be pretty good for trail use with not much climbing involved.Im also on the lookout for some light cranks and wondered if theres any that are preferable to s/s mtbs

Any old crank will do and yes, 32:16 is the best ratio to start with imo.
