A good bike? or more of a commuter?

Looking to spend no more than 500 on a touring bike, via cycle to work scheme. It will be for a touring holiday in Scotland this summer. Any other recomendations? Not looking for niche at all, just value for money mainstream touring bike.

Edinburgh Bicycle do a proper tourer for £500 called the Revolution Country Traveller. I've never ridden one but I've seen it in the shop and it looked fine.

I did one for a customer, but mad a few changes. Started with a CRS 0, so top end bike, but fitted blackburn racks & changed the bars to butterly ones for more positions. Gets used everyday for commuting & touring. He really seems to like it
