I've got a couple of bikes (but share wheels between them), both have Mono mini brakes. The wheels have 160mm rotor on the front and 140mm rotor on the back.
I'm thinking about getting some Formula's for one of the bikes and wondered if I can continue using the Hope rotors?

You should be fine using the smaller rotors. Hope use inches while Formula use metric, but at smaller sizes they're the same.
