I'm rather e-MTB curious and am considering a build over the next few months.
Is there a reason that manufacturers don't offer frame only options? Is there a complex set of wires or sensors that I'm unaware of?
Yes, basically - they prefer to sell an integrated package that works out of the box, than spend ages talking people through wiring up the sensors etc.
Depends on the system, of course - there are very good retrofit kits available from Heinzmann and Go SwissDrive, which are intended to fit to normal frames.

That's a problem lots of ebike manufacturers have - the motor system is expensive, so to keep the headline price down they spec lower quality parts elsewhere.
Maybe buy the lowest specced model in the range and replace all the components?
Sell the stock components on here or eBay.
