Second hand is your best bet at that price-point. My mate just paid £500 for a Merida with full 105, carbon fork and decent wheels.

Another option that springs to mind is getting a Boardman via the cycle scheme?

if you have a mtb why not convert it to cyclocross use, get some carbon forks like exotic and get some 26" cx tyres like maxxis mimo 1.4 or schwalbe cx pro 1.3, convert to 1x9 and away you go.

sure a cx bike will be a bit faster and more suitable but not as much as you might think.

After doing two cross races on an MTB, they are much slower on a typical cross course.
(1st race, beat a fellow club member by a good half lap, we were both on MTB's, second race he beat me by a good half lap, he'd bough a cross bike in the mean time. So a cross bike gave him an extra 10 min lap in an hours race)

I would agree that fpr £500 you are looking at second hand.

Some good suggestions folks, thanks. Genesis looks like a great buy but not sure about single speed if getting into cross?

Really want a specific cross/winter hack rather than messing with my hardtail but thanks for the suggestion.

Since then I have just gone and bought a new back wheel so that has knocked £200 off what I can afford ! Anyone got anything they want to part with for around £250....
