What size of CO2 cartridges do I want and what inflator?
Spent the last 20 minutes on tyreinflators website and am none the wiser.

Innovations Ultraflate Plus and a box of moso 16gm threaded cartridges. I buy 30 at a time.

Depends what you want really. I carry a Lezyne Trigger Drive in my seat pack on the road bike as it's ultra minimal and very light. I carry an ultraflate plus on my commuter as weight isn't so much of an issue.
Both good but the ultraflate is much less fiddly to use. And don't buy cartridges from a bike shop - way too expensive. Although since you're looking on the tyre-inflators site then I guess you know that.
