would there be a noticeable difference in going from a 90mm to a 50mm stem on a 130mm full suss?

it will make a big difference. you might find the bike a bit short, without gettign wider bars to go with it. depends how stretched out you are now.
give it a go.

Go for it. Done the same to 2 of my bikes, with 700mm bars as well.
