I am currently using a 160mm centrelock rotor with hope c2 brake, would it make much difference to use a 180mm centrelock rotor as the max rotor size for the fork says 6".

It'll be even more over the limit allowed under warranty than it was with the 160mm disc 😉
Your bike will be heavier. You'll wear out brake pads more quickly.

Warranty not an issue 5 year old bombers. Would be better to get rid of the centrelok and go for an adapter to fit normal 6 bolt
