Looking to get a kombi T5 and get rid of the car, so it needs to have all the mod cons.

Try Exploria, Yorkshire based, Huddersfield if I remember correctly.
I bought a T5 panel van off them and they put the side windows in and a bench seat in the rear.
Good service, and good work.
I saw some of their work in progress, it all looked well done.

Without doubt the best place I've come across is benleys in Devon. There web address is www.vwtransporter.net . Their attention to detail is excellent, finishing is to a extremely high standard, they can do pretty much anything you want even an internal bike rack system or a full on camper conversion. It is a family run business and they are very friendly, the cabinets for the campers are all made by hand by the owners father.

Give them a call and see what they can do for you. There looking for a van to convert for me at the moment and I can't recommend them enough
