I quite like the idea of doing some beach/coastal riding - it could make family beach holidays/weekends considerably more entertaining.
Would a 27.5" (Marin Pine Mountain is what I'm thinking) be up to this? Or are beach riding proper fat bike territory?
Anybody done this kind of thing?

Depends on the beach, on some, e.g. Pembrey, you can ride on a cyclocross bike.

It depends. Sand, like snow, takes on many qualities. Of course a wider tyre will give you more floatation on softer terrain. You need to weigh up how beneficial this will be for you personally based on where your riding will mainly be.
