2 questions:

I'm a smidge under 6 foot, average torso/leg ratio - assume I need a 19" frame?

I might want to switch now and again between 27.5" Boost wheels and 29" non-Boost (142x12mm) wheels. I know I will need some different dropouts but other than that will it just "work"?

I'm bang on 6ft and ride a first gen 19 inch frame. It's bang on for me - the geometry didn't change for the mk 2's.

The Sherpa will take 27.5+ boost, obviously with different drop outs. If you are not using plus size 27.5 then the BB will drop a fair bit

Just to state the obvious, as well as the boost dropouts, you'll also need a boost fork.

I'm 6'1" and the 19" Sherpa with 35mm stem is perfect for me.

I'm 5'10" and ride a 19" next-gen with a 35mm stem and 800mm bars. It's definitely bigger than the 17" first-gen it replaced but I feel it's a difference for the better.
I mainly use 650+ at the moment and yes the BB is a little lower but I'm not forever striking the peddles off rocks or other trail obstacles.

If you are swapping between boost and non-boost wheel sets you will need to change the rear swap-outs, not a hard job but I know it's something that I wouldn't be bothered to do before a ride. And as said you will need boost (110x15) fork for the front so would need boost adaptors for you non-boost front wheel.

If your frame and fork are both boost, then just use those front and rear boost spacers from velosolo.
