Probably a stupid question but I will ask anyway. My frame has a 140mm rear post mount but I want to run a 160mm disc. Do I just use an adapter designed for 160 - 180mm to give me the extra 20mm I need. Is there such a thing as a specific rear adapter as all the ones I see appear to be fronts.

Yes a front should do, you'll just need longer bolts.
