Will an 11 speed Cassette fit on a Hope Pro 2 hub?

Yes, both Shimano and XX1 cassettes with the correct Pro2 Hub driver.

A bit offtopic: If you have the 40t version of the Pro 2 Evo you'll be able to fit an 11sp road freehub as well: http://www.hopetech.com/11-speed-compatibility/

It's is a pro 2 Evo, does that change things at all

11speed shimano will go on a pro 2 evo (that's what I've got)
I think there's some incompatibility issue with sram cassettes though..

Nope (not on the 3 I have anyway). As long as you have the right free hub to match the cassette.

11 speed Shimano MTB cassettes will fit on any 8/9/10 speed freehub body.

11 speed Shimano road cassettes need a longer 11 speed freehub body (such as the 40t Evo)

11 speed SRAM MTB cassettes need an XD body
