Hi,
I've done some in the UK and Europe plus California but I'd like to do a biggy in Colorado or similar. Ideally looking for a 3-4 day experience with camping rather than one day full-on.
I'll be going with my dad who's blind so it can't be too hardcore although he's strong, a good swimmer and very happy in water.
Anyone with any suggestions or experiences?

Do you mean the Colorado river? I used to know a couple of people who did a multi-day trip with camping through the Grand Canyon. Best holiday ever acccording to them and they definately wouldn't have liked anything too hardcore.
For more extreme stuff I'd recommend the rafting in Idaho, but it's a bit off the beaten track.
