the quality of the meat on a swan is better than a goose and the taste of a poached bird is always better

Hmm I reckon roasting it still the best option - plus finding a pan big enough to poach it will be a nightmare.

That little girl has just kept me up for the last three hours. You can have all her bloody swans if you want.

A mate of mine, who will always provide you with a rabbit or pheasant if you ask, reckons they taste best just before their feathers start changing from grey to white.
