I've got a kit car which has a removable hard top, but if you go somewhere with the roof off, you are then left without a roof at your final destination!
So... Looking at making a convertible roof for the car, needs to be waterproof and reasonably hard-wearing but will be summer use only so no need for full winterisation.
I'm really struggling to source or find a suitable fabric, I want it to be canvas rather than leatherette but also don't want to spend over £130 on the fabric alone! Needs to be black and UV stable but other than that I'm not too fussy and I only need 2x1.5m!
Any suggestions on what fabric or material to use and where to source it?

Probably around £40 a metre. You need 2m as it's 1.5m wide.
Look up your local motor trimmers, or sometimes even upholstery companies.
