Im also planning a builders van cum bike-transporter with sleeping van but presumed the hob would be gas. Whats so special about these?
you don't have the hassle of building a vented gas cylinder locker if you use one of these.

That's the gist of it.
No gas bottles, no need for vented lockers, generally safer. You can put out a meths fire or clean up a spill with water.
Downsides, it's not quite as refined as a gas stove, can't just turn a dial and click the igniter (there's a neoprene seal to take off the tank/burner before and replace after use) and the flame can be invisible in daylight.
