Looking for some inspiration, I love all forms of cheese melted on to all forms of baked goods, share your secret recipes please.

Turn it over when done and allow Worcester Sauce to soak into the toast side.

OR

Toast + beans + chopped red onion + cheese then grill

OR

Marmite on toast first +/- grill, then add cheese and grill. Enhanced further by Worcester Sauce as above.

Ciabatta bread (cut in half), sprinkle tuna over the top then top with cheddar.

White sliced bread.
Strong thickly grated Cheddar.
Coarsely chopped pitted tomatoes.
Eggs.
Worcestershire sauce near end of grilling.
Serve with mountains of Pan Yan pickle.

Some mature but not too strong cheddar, grated, add some very finely chopped onion and a good dollop of nice or favourite Dijon mustard.
Very lightly grill one side of the bread then turn over and spread cheese mix liberably on to the untoasted side.
Grill until golden.
Remove all crusts and set them aside.
Cut cheese on toast into quarters or halves.

Crusts to snack upon later. It's best if the cheese mix coats the crusts too.

Good salty cheddar, grated, a splash of double cream, finely chopped spring or red onions and Chipotle paste.

Granary bread for me, lightly toasted on both sides, smear with above mix then grill until the cheese is lightly browned.

For a mini meal, toast one side only, wilt some spinach place on the untoasted side, crack and egg or two into the middle, cover coat with said cheesy goodness then toast.

Oh I've also been known to make "bread and butter pudding" using a French stick*, crispy fried bacon lardons and very cheesy cheese sauce.

That's not bad assuming you're not worried about your arteries. Goes well with steak, or sausages, or probably anything else you might like to fry to be honest.

*yes French stick none of your artisanal baguette stuff here, cheap trashy supermarket white bread.

Toast, spread with chutney then sliced cheese on top and grill. Simple but great enhancement to the standard issue cheese on toast.

Best thread this year.

Cheese on toast recipes are the finest post ride, post drink session, mid afternoon snack, indeed anytime food winner.

I like a bit of paprika (smoked is good) sprinkled liberally across some cheese and some thinly sliced chorizo. Bread needs to be lightly toasted on one side initially and the other side carries the delicacies.

Like a bit of onion relish or chutney under some nice cheddar.

I'm hungry.

Napoli salami under the cheese
Worcestershire sauce on the bread pre toasting is optional

If in Cornwall (may also be available in Devon) try some Hog's pudding instead of the Salami.

Got to get the best bread you can, preferably some you made yourself the day before. Day before is key because it's got to stand up to it.

Then you want to make a thick, rich, roux, and melt the cheese in. It's got to be good cheese, no mass produced. Enrich with an egg yolk. Add mustard. Leave to cool a bit.

Toast one side, lightly the other, then spread it on and grill.

Well if you're reducing Welsh rarebit to Cheese on toast then you don't understand Welsh Rarebit, But as far as cheese on toast is concerned then its as simple as the name suggests. Cheese on toast. Only two ingredients and the Cheese steals the show so choose a good cheese. My preference is a combination of a good Gouda for melting quality and a good Cheddar for flavour. The ratio of the bend is upto you. Everything else is unnecessary and just willy waving. Only embellishment is a sprinkling of black pepper or HP sauce. Bt not to much. Its an accompaniment.

Welsh rarebit deserves a thread on its own. If does well its the best. If not, its only good for the bin.

Can you still buy this then and, if so, where from? It disappeared from the shelves years ago in the South and have been on a half-hearted mission ever since to find a decent replacement. Which I haven't.

All good, there's no such thing as bad cheese on toast.

But my particular favourite is a non-melting cheese, such as Wensleydale. But placed on top of a thick layer of strawberry jam.

Glen - can I kiss you on the lips. That is perfect cheese on toast. The cheese does need to be cut very thinly IMO though - it works better like that.

The flavored oil from the chorizo slice permeates the bread, Very tasty.

I like put a handful of grated cheese in a bowl with a dollop each of Mayo and mustard, and a handful of chopped jalapeƱos. Mix that together, spread onto toast and grill. Splash of hot sauce

Some great ideas here for me to try out, i'll add a couple of my own.

For cheese on toast, add a layer of mango chutney under the cheese layer, works best with a robust cheddar.

Welsh rarebit, combine a beaten egg with a teaspoon of English mustard some chopped onion and a handful of cheddar, mix then spread on the bread, grill until golden and oozy.

Quick pizza, spread a very thin layer of tomato puree on to bread and sprinkle with a little dried oregano, top with grated mozzarella or edam add ham/pepperoni/chorizo etc. and grill.

Al of the above start with bread toasted on one side only before topping the untoasted side.

Toasted rye, goats cheese, chilli jam. I seem to be able to eat a jar of chilli jam per week.

I went out for a morning ride and felt like cheese on toast when I got home. Opened the fridge and there was still a dish of leftover lasagne so I figured I'd have a bit of that. It was superb, so I thought I'd just have a bit more. Mmmmm, then I just gave up and ate the whole dish. I do feel a bit ashamed at my gluttony and slightly ill from eating a pound of cheese, but I'm sure that'll all be forgotten after a nice nap.
