Your broadband speed. Or you're on a dodgy wireless connection.

likely broadband speed as above, start the clip playing, press pause, go make a cuppa, come back and watch it when it's all cached and ready to go!

youtube does seem to be slower at downloading vids recently too though.

buffering, as above.

click play, then once its started, click pause, and come back when the bar at the bottom has been filled with the red line to the end, thats the video buffer.

if its still jerky, like it is on my computer, thats a problem known as "your computers crap or has a buggered processor and cant even keep up with internets"

Check the speed of your connection here: http://speedtest.net/ and report back with the numbers.

A simple metaphor for "Buffering" is to imagine a bucket (buffer) that is being filled with water from the tap (internet).

There is a hole in the bottom of the bucket (you watching the video). If the bucket is ever empty then the water coming out the hole will stop.

You can improve things by turning the tap on more (faster internet connection) or by plugging the hole until the bucket is full (pressing pause).
