Just rationalising all my scraps-of-paper recipes into google.docs and I thought I'd share a favourite around.
You don't even have to be a good cook for this - it's easy, quick and foolproof and your mouth will love you.
Mark Hix’s Welsh Rabbit Crumpets
8 toasted crumpets
2 egg yolks
250g Caerphilly or Cheddar cheese, grated
3 tsp Worcestershire sauce
1tsp English mustard
4ml double cream
salt & pepper
METHOD:
Mix together the cheese, egg yolks, Worcestershire sauce, mustard and double cream, and season.
Toast the crumpets on both sides.
Spread about 1cm thick with the cheese mixture (to the edges), and grill on a medium heat until nicely browned.
Bon appetit.
Sounds pretty damn good, nice warm pint would wash that down nicely.
Now we're just waiting for someone to come along and proclaim (incorrectly) that's it's actually 'welsh rare bit'. 🙄
