Every day is my day off that. 🙂

Ohh, sweet potatoes - good shout, my wife loves them. I wasn't sure about creamed leak - I thought about them (we both really like leak) but thought it might be a pit much, couldn't quite decide.

I'm surprised no one has mentioned cooking it in a water bath yet.

I must get round to trying it Heston's way, admittedly not had a steak for a while, but your all glossing over the fact, that Heston way included 2 days of being sat in the fridge open, to dry it out first.
Might sound daft but his way of cooking chicken, with a 24 hr brine soak first & really slow cooking works spectacularly.

BTW - ended up cooking it the Heston method with just oil and salt, served with dauphinoise potatoes (gorgeous), honeyed carrots and roasted sweet potatoes and sweet pepper (and a dribble of red wine reduction). Ohh, I had an open cap mushroom too.

Dessert was a cheat - a Sainsbury Taste the Difference dessert.

And wine.

It was all superb.

The best steak I have ever had was enjoyed in Barcelona and was cooked in rock salt and served with aubergine deep fried in beer batter.

The only think that fillet needs imo is heat. Lots of it. Full heat for a few mins each side (depending on thickness) with a little oil, and the resulting charred bits will taste better than any sauce. Better than almost anything else in the world, actually.

Serve with some veg and chips - if you really want to push the boat out, get a £5 chip pan from the supermarket and fill it with lard. Seriously.

Gas BBQ, hot as is possible, warm steak for a couple of hours to room temp, lightly oil and salt just before you cook, onto BBQ, flip flip flip flip. The best steak is a well rested steak. Off and keep warm for 10 mins. Service with homemade spicy roasters, glased veg and a bottle of something red and large. Optional - homemade horseradish sauce.
I love steak me.
