So for years I have been claiming to detest the Avocado without actually every trying one, turns out I quite like them, when I was younger I did a similar thing with mushrooms - now one of my favourite foods. Currently I claim to hate mussels - again without ever trying them.
Anyone else do this? Or I am I just monumentally fickle and resistant to change?

The only mussels I'd ever tried were the ones you get in pots at the seaside so always resisted them. Then I tried some that were cooked properly in a lovely sauce - they were awesome.
The seaside ones I still find rank.

I tend to find most of my food "hates" are really just a mild dislike. Mushrooms, nuts, sprouts etc, never used to eat them but if they turn up on a plate, I'll eat them now. Spam fritters and liver and onions like we had at school I'd never eat however I can't imagine where you'd find the 1980s era dinner lady who used to make those horrors for us.
I think there's quite a difference between hating food and not fancying the idea of eating it even though you never have. I really don't fancy any of that bush tucker rubbish, but it could be really nice.
