ate some experimental courgette rosti that i made earlier (still a bit too soggy, gotta dry out the grated courgette a lot more i think!)- gonna have a spiced fruit scone in a minute.
drinking a glass of kombucha cordial.

my recipe for courgette rosti is not to bother trying to cook it too much as you'll just drown everything. Warm lashings of olive oil in a large pan with some garlic and then warm through the grated courgette, turning into the warm oil. Only cook for 5 minutes. Add grated parmesan.

i kind of vaguely followed a recipe that reckoned i needed to dry out the courgette in a tea towel a lot first as it's the retained water getting released in the cooking process that makes them soggy.
i added a bit of plain flour and garlic to the mix, and cooked in olive oil too. they weren't bad, just not as great as i'd hoped.
