Why do you get a little glass of water when you order an espresso?

Never seen it in UK but lots abroad. Guess it's because it's hot and caffeine is a diuretic so keep your fluids up? No idea.

Surely if you drink the water first then its gone before you know whether you like the coffee or not? Am I missing something?
