Done it a few times over the years of various side dishes. Not bothered the last couple as really no one is that bothered, if they get their dinner that's all their after. This year we're just doing simple veg with the meats, simple and quick so I can spend a rare Christmas off enjoying it.

We have 14 people round, four of them wives, a big kitchen.

We need to keep them busy or they will start talking and we will die of oxygen starvation.

Parmesan parsnips were good (Part boil parsnips then dip in flour/parmesan/pepper mix and roast off till cooked through)
Braised red cabbage with apple and raisins
Brussel sprouts stir fried with pancetta
Suggestion from work - brussels lightly mashed with butter and stacks of black pepper

It's the only day of the year I allow myself to eat sprouts. I love them, but no one else loves it when I eat em....

Make the mash more interesting - add some celeriac simmered in milk or some sweet potato in there as well.
Baked bulbs of garlic.
Baked whole onions.
Onions, peeled, cross cut in the top, push in some rosemary butter, bake (wrap in bacon / ham if desired).

Par-boiled sprouts, then sauteed in butter, sprinkle of sugar and pancetta. Really makes them interesting.

Beet root is on the list
Nut allergy prevents those options
Sprouts possible but similar to the cabbage when parboiled and then sautéed which is our preferred method

🙂

There is a Delia recipe somewhere for red peppers halved, filled with plum tomato and quarters of fennel, topped with crushed pepper and olive oil and roasted. Looks fantastic and tasts even better.

And is a faff to make so fills your main criteria

Cook sprouts to just before done then finish off by sauteeing in chestnut puree and butter.

Roast beetroot - parboil then roast with orange juice, olive oil, balsamic vinegar, honey, juniper berries, peppercorns and bay leaves.

I haven't cooked for Christmas for a three years now. Missing it!
