Fancy making a nice fruit cake for Christmas, any wonder recipes please?
Just made ours, Nigella's from domestic goddess book. It's probably online somewhere, easy, delicious.
You're cutting it a bit fine aren't you? It'll barely be merry by christmas.
Just in time for next year.

I use one of Nigel Slater's recipes. Not a big fan of really dark fruit cakes so I use 'lighter' fruits - less dates, prunes etc and more apricots and the like. I also use Amaretto instead of brandy when cooking it, and soak the fruit in amaretto the night before. Then feed it alternately with brandy and Amaretto.
It gives a slightly sweeter, lighter cake than a lot of recipes.
Last time I made one I used Delia's recipe but changed brandy for amaretto. It was spiced rum the year before and whisky the year before that.
Mary Berry has a Victorian Christmas cake recipe which is a lighter style but still really tasty.

I like [url= http://www.goodhousekeeping.co.uk/food/recipes/gh-christmas-cake-2013 ]this GH recipe[/url] from a few years ago. The fruit is raisins, sultanas, apricots and figs, and the nuts are walnuts so it's a little bit different from the more trad dark cakes.
