Hotel Du Vin is meant to be good, never stayed there but the lunch is rather nice, as is the wine list.
Bit pricey, but hotels in Edinburgh are v expensive.
Avoid the Grassmarket unless you aren't planning on sleeping, oo-er missus.
The Royal Terrace Hotel is very nice - four star i think. Try the steak in the restaurant.
Malmaison? Just be wary of strangers on tandems down that neck of the Burgh.
The Glasshouse is rather nice. I've heard of folks getting really cheap deals on rooms there too.
always enjoyed staying in the Radisson on the Royal Mile when on work. Great location, modern interiors, but not cheap
Missoni on Royal Mile/ George IV Bridge is meant to be good and regularly has offers on.
Also George Hotel on George Street (often the city centre "4* mystery hotel" on Last Minute.com
Avoid anything Travelodge/ PremierInn at the weekend, will be full of stag and hen dos.
Tiger Lily was nice. Massive rooms. George St is a bit too w*nky though

Quant and Classy and altogether a perfectly romantic location for a city break. Food is top notch as well.
