Depends what sort of riding you fancy. Lots of bike packing going on here  https://www.velodyssey.com

I cycled about 20km of it near Bordeaux last summer and it is an amazing long dedicated (no motorised vehicles allowed) cycling/walking route through the pine forests behind the beach. It puts some UK roads to shame and would be fine on a road bike.

Lots of towns en-route with cycle hire available a short distance from the track. The linked site has a good set of maps with the hire spots shown.

Similarly there is a good network along the Loire, but that may be too far away

Sorry, to add; I had a great day cycling between different beaches/cafes and justified using an MTB by the fact that the beach stops had a bit of sand here and there 😉

All along the coast up from Bordeaux are great cycling tracks.

Soulac sur mer is a lovely place if you're heading up that far. Can put bikes on the train.

There are lots of cycle paths around the Arcachon Bay south of Bordeaux which are very pleasant, and we've hired bikes in Andernos before.  There is a Parc VTT (mountain bike park) marked on the map near Andernos but our local kids have built better in the woods so I wouldn't bother visiting it.

Maybe a bit far out but I found some decent singletrack VTT waymarked XC trails north of Royan

15-20 mile loop iirc

holidayed a lot in the area (north & south bank, Arcachon etc) and not found much else tbh

there are extensive networks of tarmac cycle paths that are perfectly pleasant and great for getting from A to B

many off-road trails ithat I’ve encountered In the area are just sand and a bit crap to ride
