Morning All
Im going to be fitting a new XTR rear mech today and wonderd if anyone can recommend a decent set up video for doing so? Indexing gears is always a chore for me so all help is much appreciated.

Set the high and low stops, attach the cable, twiddle the tension knob until the gears change.
Very simple really and no need for a video but try the Park Tools site.
Is it a shadow?
If so then top jockey wheel needs to positioned directly inline with large and small rear rings and as close as possible to the large ring. Then index as normal.
Non-shadow mechs are less fussy about the above. If like me the closest you can get the top jockey wheels to the rear granny ring was about 20mm then get rid cos shifting will be awful! Shimano say about 5-6mm.
Follow the instructions that came with it, can't get better than those.
