Bent my rear mech this morning but have found out i can just replace the 2 plates that the chain runs through.
Question is, does anyone know where is can buy the 2 plates for the mech?

Try these guys:
If you type XTR M980 into the search on their site it list both plates. I used them for a M970 mech with no problems.

Any lbs should be able to get them through Madison
Shimano are spares are cartridge free to the shop so no waiting to make an order
