I have an older XTR rear mech (RD M952) and the original jocket wheels are finished. Is it worth replacing with better quality ones? If so what do you suggest, and are plastic ones or metal ones the best?

BBB seem to work pretty well (try dotbike for good prices) - I woudl recommend repacking the bearings with grease though, the original stuff doesn't seem to last long.
