[Closed] Winter mtb holiday ideas

I've got a couple of months off 'work' (Dec/Jan) and am looking at somewhere mtb related to travel to and ride at or round. I bike packed through NZ 3 years back, and then went back last year for a couple of months (travelling with the ex) so the obvious suggestion is either Queenstown with the DH rig or Nelson for the 2 months?

I fancy something a bit left field, like fat biking through Vietnam or bike packing through Bolivia or maybe the torres del paine, anyone done anything similar? any suggestions?
