Friends bike had a chain off rear derailler explosion last week, its bent beyond saving and the hanger bent too...

Are halfords the only place to get a new Carerra hanger?

I'm going to put my spare X7 on, and i've got a spare 9 speed casette i'm thinking to fit as an upgrade, will it fit, it looks like theres already some overhang of the current cassette on the hub?

That's a freewheel so your cassette won't fit.

The gears are Sram grip shift up front, and a shimano derailler out back, will my Sram X7 derailler work ok once i've set the limit screws?

No, your SRAM X7 mech won't work. The shifters are designed to work with a Shimano rear mech.
Final option is to replace the gripshift with X7 trigger shifter + rear x7 derailler, but these are 9 speed, would that work? 😆
If not looks like i'll just pick up a new shimano derailler.
They would only work if you fitted a new rear wheel & cassette
