[s]So[/s] When people ask things like "what tyres for x" etc should it be which or nay?
What mountain bike always annoyed me as you have to choose one mountainbike of many rather than one from a continuum? I figured that customised specs might muddy the waters there but it still bugs me.
Any elucidation for we grammar-ignorant folks of the nation?

I believe that both would be correct dependent on the rest of the question. The use of 'which' should be used when there is a finite choice and 'what' should be used there are many or infinite choices. So you might say 'which of these three bikes are the best?' followed by the Ops chosen bicycles.
