choices are:
fulcrum racing 7 (but i cant find any red rimmed ones any longer, damn shame!)
mavic aksiums
shimano wh rs20
or wh rs30s
only for pootling about on, strength is key though as i hope to get mildly cross on them occasionaly
i quite like the look of the rs30s with the deep section rim, does this make them stronger?
any experiences good or bad of any of them?
(they need to be shimano hub, so thats the khamsin out btw)
Think about servicing - they're all built to a price to a degree. If a spoke or freehub went, can you get hold of one easily etc etc? No experience directly of the wheels you list, but have had a 'mare getting hold of spares for Mavic factory wheels in the past.

It can do, also heavier and less comfortable.
I'd echo B's comments and look at weight saved per £ cost against shop-builts.
