Righto gents,
Got myself a 20mm Superstar front hub and a XM317 rim.
How do I work out what size of spoke I need?

As above, or email SSC and ask what spoke length they use which any particular rim and compare ERD. Extrapolate from that would get you close enough I think, or you might strike lucky and find out that they know at SSC anyway.
