I've looked at thread lock and there seem to be far too many to choose from. I need it for a bike build, what do you use / what would you recommend?

loctite 243, job done.
I found all the bits that needed threadlock already came with it on
loctite 222, it's lower strength and all that's needed for a bike

It's a second hand frame being built with components on my current bike (plus I'm totally stripping the frame to replace bearings prior to re-build)!
What threadlock for pedal grub screws?
243 it's blue, and it will be fine for everything that you don't want to vibrate loose.
222 is ok but it's low strength. 243 isn't crazy strong like a chemical weld!
The older version was 242 but the 243 is oil tolerant so if you haven't cleaned every trace of oil off both surfaces it will still go off.
Sorry to sound like a loctite geek but I went on a loctite course through work to raise awareness into suitability of their products in different applications.
Another vote for 222. It's been my loctite of choice for a good number of years and never let me down on pedal pins, rotor bolts and the like. Comes undone with only a small effort and handtools.
243 Breaks very easily so no problem to use on bikes

I like the pritt-stick loctite, very convenient and goes a long way.
