Been looking at the sonder transmitter and the new surly karate monkey.
Anything other recommendations?

In true STW "recommend what you got" I love my Dartmoor Primal Plus. Cheap and rides great with 3" tyres.

Again, recommending what you have: Trek Stache.
But you could also build a Ragley Bigwig into a plus bike or a DMR Trailstar.
