Finding more and more road bikes in the workshop - what pump is good for roadie pressures? Used to high volume pumps like the Joe Blow for MTB but roadie tyre pressures are insane compared!!

Joe Blow is fine for a road bike, goes way beyond 120 psi and that's probably max for a road bike.

Depends which joe-blow you have. Mine goes upto 160psi, which is plenty even for track bikes. My road bikes at 90/95 F/R (89kg, 25c, tubeless).

Downside is the non return valve is prone to overheating, never used to be a problem so I assume this is something to do with going mad sealing tubeless tires (on mountain bikes, road tires are so b****** tight it's never been a problem).
