I'm running a standard 32-tooth front ring and am about to order a fresh new 1 x 10 XT drivetrain. What rear mech cage length can I get away with? I'm thinking the long might be unnecessary?

I use a sram short cage mech with a 11-36 cassette. In shimano xt, a GS (medium) will be more than long enough. Unless it's full sus with extraordinarily big chain growth, but is very unlikely.

XT only comes in SGS or GS; GS will be fine.

Thinking of going 1x10 but is it ok to run a GS with cassette with a 36T sprocket?

The Shimano website lists the total capacity, minimum sprocket size, maximum sprocket etc for their mechs.

I've just built a new 1x10 bike with XT drivetrain and i used the GS medium mech and it's absolutely fine. And it was only £44 at Rose bikes.
