Can anyone recommend some waterproof overshoes that'll fit properly over MTB shoes?

Endura MT500 overshoes work ok for me. Bear in mind the sizing though - I'm an 8 and take Large. I think On one/Planet X do some similar ones for about £15 too.

planet x are ok, easy to fit, the sole of them isn't very reinforced tho so dunno how long they'll last.
Endura mt500 are nice and warm but a total PITA to get over size 12 winter boots.
Altura shield are very easy on/off not as warm as neoprene and velcro on your shoes may shred the liner but they're good to keep in pack for when you get caught out in a deluge.

No, they're trainer-style trail shoes.

Sealskinz socks?

Won't stop the shoes getting soaked through though ...

MT500 here and love them. Easy on but pain to remove. Waterproof within reason but would be better if you don't have cleats letting all the water in!

They fit over both road and MTB shoes although they'll only keep out water from above. Put your foot in a muddy puddle and water will come in via the hole that the cleats go through.
